Summer is winding down, but frosé is always in season at The Co-Op. The Charleston, SC-based eatery is opening two Nashville locations before the end of the year — Hillsboro Village and The Gulch.

We got an early look at the Hillsboro Village location (2005 Belcourt Ave.) before it opens soon (if you spot neon pink, you’ve found the right place), so here’s what to know before you flamingo.

The frosé

The frosé is made with dry rosé, lemon juice, and housemade simple syrup. Although it's served in a frozen consistency, water or ice is never added + the drink is 90% rosé. It’s available in sealed 16 oz. bottles, wine bottles, and flights of four flavors. One of the most popular frosé flavors is The OG (strawberry), though flavors rotate daily based on availability.

The food

The Co-Op’s main food offerings include sandwiches and salads. The California Turkey is piled high with bacon, avocado, tomato, sprouts, and a herb cheese spread on whole wheat + egg, chicken, and tuna salad sandwiches appear on the menu. There's also a kids menu.

Early riser? The restaurant serves breakfast, so other menu highlights include bagels, avocado toast, and egg and cheese sandwiches (bacon and sausage are available) + $1 drip coffee.

Prices range from $11 for a 16 oz. bottle of frosé, ~$9-$13 for lunch items, and ~$5-$7 for breakfast sandwiches.

What we tried

Editor Skylar’s order: California Turkey + Blackberry Lavender frosé
Editor Dylan’s order: Veggie Sammie + Prickly Pear frosé

Party favor: Did you know? The Hillsboro Village location was previously home to ‘za (a pizza joint by Biscuit Love’s Karl Worley), so you may remember this Bill Murray mural. As it turns out, the Charleston-based actor remains on display, with the pizza quote swapped out for a cup of frosé.
